Smoked Kielbasa Jasmine Rice w/pepper and onion

A delicious dish of rice and kielbasa with onions and green peppers

Directions:

  1. In a large high-sided skillet, heat 2 tablespoons of avocado oil, then add kielbasa slices and cook until browned.

  2. Add the onion and cook until soft and starting to turn translucent

  3. Add green peppers and heat for a couple of minutes

  4. Add in Rice and stir in, and cook for 1 minute

  5. Add tomatoes, garlic, and 2.5 cups of stock. Stir everything evenly and bring to a boil.

  6. Cook the dish for 20 minutes, stirring every few minutes to prevent sticking. If the rice gets too thick, add a little more stock to keep it moist until the very end.

Ingredients:

12 Oz Kielbasa sliced (We used Holmes Smokehouse Pecan Smoked)

1 large green pepper, cut into small pieces

1 Medium yellow onion, diced

Garlic (we use a large clove, but three or four smaller cloves work too)

1 Can of Petite Diced Tomatoes

3 Cups of Vegetable Stock or Chicken Stock

1 Cup of rinsed Jasmine Rice

2 Tablespoons avocado oil

Slow Cooked Chuck Roast with Potatoes and Carrots

Directions:

  1. Peel and cut the carrots into large pieces

  2. Slice onion

  3. Slice garlic

  4. Dry the chuck roast and season thoroughly with salt, pepper, and garlic powder.

  5. Heat the oil in a large skillet and brown the roast on both sides for 3-4 minutes. Once browned, remove the roast.

  6. In a crock pot, add the roast, 3 cups of beef stock, and red wine. Add potatoes, carrots, garlic, and onions. Place the fresh rosemary on top.

  7. Cook the roast on HI for 5-7 hours. I ended up cooking this on on HI for 6 hours and on Low for another half hour until I was ready to serve.

Ingredients:

2 lbs Chuck Roast

24 oz Honey Gold Potatoes

4 large carrots

1 Medium Yellow Onion

3-4 cloves of fresh garlic

Fresh Rosemary

1 Cup Red Wine

3 cups Beef Stock

1 tablespoon of oil (I use Avocado oil)

Salt, Pepper, Garlic powder

Homemade Chili With Beans

Directions:

  1. In a large Dutch oven or large pot, brown ground hamburger meat

  2. Once the meat is browned, add the ingredients, including the seasoning, and stir thoroughly.

  3. Bring chili to a boil, then reduce the heat and simmer for 12 minutes.

  4. Remove from heat and let sit for 2 minutes to cool before serving.

  5. Serve with your favorite cheese (we prefer mozzarella and cheddar)

1 lbs Lean Groundn Beef

1 Can Petitte Diced Tomatoes (14 oz)

1 Can Tomato Sauce (8 oz)

1 Can Black Beans(15 oz)

1 Can Dark Red Kidney Beans (15 oz)

1 half a large red onion, finely chopped

Your favorite cheese (we prefer mozzarella and cheddar)

Chili Seasoning:

1 tbsp chili powder

1 tsp ground cumin

¼ tsp cayenne pepper

¼ tsp garlic powder

½ tsp onion powder

1 tsp salt

¼ tsp fresh ground pepper
